Double Chocolate Zucchini Bread

Ingredients:

  • 1 cup all purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 teaspoon espresso powder
  • 1/4 cup coconut oil
  • 3/4 cup semi sweet chocolate chips
  • 1/3 cup plain Greek yogurt
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini

Instructions:

  1. Preheat the oven to 350 F and grease a loaf pan.
  2. In a large bowl, whisk together the cocoa powder, flour, baking powder, baking soda, espresso, salt and mix in the chocolate chips. 
  3. In a separate bowl, add the eggs, yogurt, oil, sugar and vanilla extract and mix together until combined. Slowly pour the wet ingredients into the dry ingredients and whisk together. Fold in the zucchini.
  4. Cover the loaf pan with foil and bake for 45-55 minutes. Check the center with a toothpick to make sure it is fully cooked through.
  5. Remove the bread from the oven and let it cool for at least 1 hour. 
  6. Store the bread in the refrigerator for up to a week.
  7. Serve and enjoy!
