Hail Caesar Salad

Who doesn’t love a Caesar salad? If you thought this classic was off the menu because of too many forbidden ingredients, think again. The best part? Once you taste our warm toasted herbed almonds, you won’t miss the croutons.
ServingsFour (two cup) servings
Ingredients:

For Toasted Herbed Almonds

  • 1 tbsp high polyphenol extra virgin olive oil (EVOO)
  • 1 cup sliced almonds (You can used blanched and skinless if you’re lectin sensitive, or with skin for higher antioxidants.)
  • Sea salt as desired
  • 1 tbsp fresh rosemary

For Salad

  • 1/3 cup Easy Caesar Dressing, plus more as desired
  • 8 cups fresh romaine lettuce
  • 1/4 cup cheese or nutritional yeast (see notes above)
  • 1 cup toasted herbed almonds
  • Freshly grated pepper, as desired
Instructions:

For Toasted Herbed Almonds

  1. Warm EVOO in a skillet on medium heat.
  2. Add almonds, fresh rosemary, and sea salt to taste.
  3. Stir to evenly coat the almonds.
  4. Continue to rotate to ensure even cooking.
  5. Within 3-5 minutes, you’ll see the almond begin to lightly brown.
  6. Turn off the heat and keep the almonds in the pan to remain warm.

For Caesar Salad

  1. Pour 1/3 cup of the Easy Caesar Dressing into a large mixing bowl.
  2. Add the chopped romaine and gently toss until evenly coated.
  3. Plate and top with grated cheese or nutritional yeast (See notes above.)
  4. Top with warm herbed almonds.
  5. Season with freshly ground pepper to taste.
  6. Add more dressing, as desired.
  7. Enjoy!
