Beef Stir Fry

Ingredients:

  • 1 1/2 lbs. flank steak
  • 2/3 cups tamari or coconut aminos
  • 2 garlic cloves, smashed
  • 2-3 teaspoons maple syrup
  • 1/2 cup orange juice
  • 1 large carrot, peeled
  • 1/2 green bell pepper
  • 1/2 yellow bell pepper
  • 1 1/2 cups broccoli, florets
  • 1 cup snap peas
  • 1 Tablespoon olive oil
  • 4 cups cooked brown rice
  • Sesame seeds and chives to garnish

Instructions:

  1. In a large plastic bag, whisk together the tamari, garlic cloves, and orange juice. Add into the plastic bag and cover the steak, marinate for at least 30 minutes or over night.
  2. Chop all of the vegetables, carrots, bell peppers, broccoli.
  3. Heat the olive oil over a large skillet over medium heat, then add in all of the steak and leftover marinade. Cook the steak for about 10 minutes, stirring frequently. Remove the steak after 10 minutes, add to a plate and let rest.
  4. Add the vegetables into the skillet and cook until soft, about 5-6 minutes. Add the steak back into the pan, along with the 2 Tablespoons of maple syrup.
  5. Turn the heat off, stir in the cooked brown rice, top with sesame seeds and chives.
  6. Serve and enjoy!
