Green Mango Salsa

This Apollo Health recipe is perfect with the KetoFLEX 12/3 meal plan! A fresh take on traditional salsa with a functional food twist – green mangos! Green mangos are an excellent source of resistant starch and prebiotic fiber, which feeds the healthy microbes in your gut.
Servings: 12 (1/4 cup) servings
  • 2 medium green mangoes, peeled and diced
  • 1 tomato, diced
  • 1 red pepper, USDA organic, diced
  • 1 avocado, diced
  • 1/2 red onion, diced
  • 1 bunch cilantro, stems removed, chopped
  • Lime juice, to taste
  • Salt and pepper, to taste
  • Optional: chopped jalapeno, USDA organic, seeds removed
  1. In a medium bowl, add diced green mangoes, tomato, pepper, avocado, red onion, and chopped cilantro.
  2. Season with salt, pepper, and hot sauce, to taste.
  3. Gently stir ingredients until well combined.
