Green Mango Salsa
This Apollo Health recipe is perfect with the KetoFLEX 12/3 meal plan! A fresh take on traditional salsa with a functional food twist – green mangos! Green mangos are an excellent source of resistant starch and prebiotic fiber, which feeds the healthy microbes in your gut.
Servings: 12 (1/4 cup) servings
Ingredients:
- 2 medium green mangoes, peeled and diced
- 1 tomato, diced
- 1 red pepper, USDA organic, diced
- 1 avocado, diced
- 1/2 red onion, diced
- 1 bunch cilantro, stems removed, chopped
- Lime juice, to taste
- Salt and pepper, to taste
- Optional: chopped jalapeno, USDA organic, seeds removed
Instructions:
- In a medium bowl, add diced green mangoes, tomato, pepper, avocado, red onion, and chopped cilantro.
- Season with salt, pepper, and hot sauce, to taste.
- Gently stir ingredients until well combined.
