Sesame Noodle Buddha Bowl

Try this Sesame Noodle Buddha Bowl for a quick and easy lunch!

Ingredients:

For Dressing:

  • 1 Tablespoon tamari
  • 1/4 cup rice vinegar
  • 1 teaspoon ginger
  • 1/2 teaspoon sesame oil
  • 1 garlic clove, minced
  • 1/2 teaspoon maple syrup

For Bowl:

  • 6 ounces ramen rice noodles
  • 1 avocado, sliced
  • 1/4 cup edamame
  • 2 cups snap peas, blanched
  • 2 radishes, sliced thin
  • Sesame seeds
  • Scallions, chopped
  • Squeeze of lemon

Instructions:

  1. Make the dressing: In a small bowl, combine the tamari, rice vinegar, ginger, sesame oil, garlic, and maple syrup and mix.
  2. Soak the ramen rice noodles in boiling water for 6-8 minutes or according to package. Drain and rinse well in cold water when done.
  3. Toss the noodles with the dressing, then divide into two bowls. Add the edamame, avocado, snap peas, radishes, and scallions on top of the noodles. Top with sesame seeds, a squeeze of lemon juice and more dressing.
  4. Serve and enjoy!
