Simple Grilled Salmon & Corn

Ingredients:

  • 4-ounce wild caught salmon fillets (one per person)
  • 1/2 teaspoon salt
  • 1 Tablespoon olive oil (for salmon)
  • 2 Tablespoons fish seasoning (2 Tablespoons smoked paprika, 1 Tablespoon onion powder, 2 Tablespoon garlic powder, 1 teaspoon thyme, 1 teaspoon salt, 1 teaspoon celery seed, 1/4 teaspoon allspice, 1/2 teaspoon cumin).
  • 4-6 ears of corn (depending on how many people are eating)
  • 1 Tablespoon olive oil (for corn)
  • Salt to taste (for corn)

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Shuck the corn cobs, then use your hands to rub in the olive oil into each one.
  3. Brush the olive oil into the salmon fillets, then add the fish seasoning and salt on top and massage into the fish.
  4. Once the grill is ready, cook the corn for about 12-15 minutes or until they start to blacken.
  5. Cook the salmon fillets for 3-5 minutes with the skin side up, then flip and cook 2-5 minutes, depending on thickness of salmon.
  6. Let the salmon rest before serving.
