Sweet Potato Hash
Ingredients:
- 4 teaspoons olive oil
- 1 poblano pepper, chopped
- 1/2 small red onion, chopped
- 1 large sweet potato, diced
- 2 cloves garlic, sliced
- 1 teaspoon chili powder
- 4 large eggs
- 4 leaves lacinato kale, chopped
- 1 avocado, sliced
- Lime wedge, sliced
- Cilantro, chopped for serving
- Hot sauce for serving
- Salt and pepper to taste
Instructions:
- In a large pan, heat the 2 teaspoons of olive oil over medium heat. Add the poblano peppers, onions, garlic and 1/4 teaspoon salt and cook for about 5 minutes or until it becomes soft. Remove from the pan and set aside.
- Heat the remaining 2 teaspoons in the pan, then add in the sweet potatoes and 1/4 teaspoon salt and cook for about 10 minutes. Add in the sauteed veggies back into the pan and stir in the kale and chili powder.
- Make 4 shallow wells in the hash and crack the eggs into them. Reduce the heat to medium-low, cover and cook for about 5 minutes. Season with salt and pepper to taste.
- Top with the avocado slices, cilantro, lime wedges and hot sauce.
- Serve and enjoy!
