Roasted Red Pepper Hummus!


  • 1/2 yellow onion, diced
  • 2 red bell peppers, diced
  • 6 Tablespoons tahini
  • 15 ounce can of garbanzo beans, drained and rinsed
  • 2 garlic gloves, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 Tablespoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • Salt to taste
  • Fresh parsley, to top


  1. Preheat the oven to 450 F.
  2. Add the bell peppers to a baking sheet lined with parchment paper. Cook them for 30-35 minutes until they are charred, flip them halfway through.
  3. Remove the peppers and let them cool. Then cut in half and scoop out the inside.
  4. In a food processor, add in the roasted red peppers, onions, garlic, garbanzo beans, cumin, paprika, pepper, lemon juice, olive oil, tahini and blend until smooth. Add salt and pepper to taste.
  5. Garnish with parsley if desired. Serve with your favorite crackers, pita bread or veggies and enjoy!
