Ingredients:
- 1 medium cucumber, chopped
- 1 pint cherry tomatoes, halved
- 1 cup snap peas, sliced
- 1 bell pepper, diced
- 1/2 small red onion, diced
- 1 cup corn, fresh
- 1/2 cup roasted sunflower seeds
- 3/4 cup goat cheese
- 3 Tablespoons olive oil
- 1/2 cup parsley, chopped
- 3 Tablespoons red wine vinegar
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
Instructions:
- In a large bowl, add the cucumbers, tomatoes, snap peas, bell peppers, red onion, corn, sunflower seeds and goat cheese.
- In a small jar, add the olive oil, red wine vinegar, salt, pepper, garlic and red pepper flakes. Mix until combined.
- Add the dressing over the salad components and mix together.
- Serve and enjoy!
