Fresh Summer Salad

Ingredients:

  • 1 medium cucumber, chopped
  • 1 pint cherry tomatoes, halved
  • 1 cup snap peas, sliced
  • 1 bell pepper, diced
  • 1/2 small red onion, diced
  • 1 cup corn, fresh
  • 1/2 cup roasted sunflower seeds
  • 3/4 cup goat cheese
  • 3 Tablespoons olive oil
  • 1/2 cup parsley, chopped
  • 3 Tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. In a large bowl, add the cucumbers, tomatoes, snap peas, bell peppers, red onion, corn, sunflower seeds and goat cheese. 
  2. In a small jar, add the olive oil, red wine vinegar, salt, pepper, garlic and red pepper flakes. Mix until combined.
  3. Add the dressing over the salad components and mix together. 
  4. Serve and enjoy!
